I agree that the traditional software development approach has things to offer web development. A dedicated and consistent individual (or team) could achieve it with other JavaScript frameworks, but Cappuccino essentially demands that you practice it. Whether that is a pain in the arse or a thing of great value seems like a personal preference.
I like it.
Since you're interested, I can write some of the details about Mahou's implementation. I'm planning to start over with better planning and a clearer goal, so I may release the source as well at some point later this week.
